Chef De Partie - Baker (Pastry Kitchen)

Basic Function

Responsible for ensuring all task assigned is accompanied and maintenance of the kitchen with regard to the continual improvement process.

Scope of the Position

The Chef de Partie reports to Assistant Section Chef and Section Chef and assists both chefs in all aspects of the kitchen.

Job Specification

The incumbent will be expected to have the following competencies:

  1. Prepare food based on banquet event order for the day.
  2. Delegate and supervise all mise-en place preparations for the day.
  3. Conduct training for subordinates to work independently.
  4. On time delivery of pastry and bakery products for event and special order.
  5. Carry out the smooth running on kitchen operations with the assistance of the assistant section chef and team members.
  6. Follow up on implemented steps and standards with the assistance of the assistant section chef and team members on achieving departmental objectives and targets
  7. Initiate smooth and effective manning of the kitchen operations with the assistant section chef.
  8. Ensure each dish that is served is properly garnished and displayed.
  9. Ensure all cooked food which is not exposed is properly stored according to HACCP requirements.
  10. Knowledge and understanding of the quality requirements associated with the provision of customer services and the handling, storage and transportation of food.
  11. Knowledge and understanding of the Food, Quality, Environment, Safety & Health (FOQESH) Management System and Business Continuity Management Systems sufficient to identify opportunities for improvement.
  12. Knowledge of understanding of the hazards, risks, significant environmental aspects and legal requirements associated with the function’s activities, the setting of Food, Quality, Environment, Safety & Health (FOQESH) Management System and Business Continuity objectives and targets and the required control.
