Assistant Catering Manager

Basic Function

The role of the Assistant Catering Manager is responsible for assisting in managing the activities and operations related to catering services including the planning and coordination of catering for events such as catering setting up/clearing out, catering serving techniques and styles, event replenishment and catering storage management.

To assist in ensuring the management of catering services is carried out effectively.

Job Description

The incumbent of this position would be expected to have the following competencies:

  • Assists the Deputy Director of Operations in developing policies, processes and setting standards for catering services within the Centre.
  • Assists the Deputy Director of Operations in planning, implementation and monitoring the requirements and provision of specialist advice and services related to catering services in the Centre including catering setting up/clearing out, catering inspections, different catering styles, coordination with other departments and event organisers etc.
  • Assists the Deputy Director of Operations in planning, implementation and monitoring for ensuring the compliance of catering services with ISO and Business Continuity requirements, such as setting up/clearing out and storage management of catering items e.g. meeting kits.
  • Assists the Catering Manager in planning the requirements and provision of catering services within the Centre, including;
    • Management of catering services including the necessary manpower, catering crockery and items required for events, food and beverage services.
    • Coordination of catering services within the Centre, with other departments, especially with Culinary, Beverage, Set Up, Event Coordination, Stewarding etc.
    • Catering inspections throughout events to meet Event Orders and client requirements as well as the Centre’s and ISO requirements
    • Supervision of catering activities for all phases of events to meet the Centre’s and ISO requirements
    • Storage management of catering items such as meeting kits, mints
    • Post-mortem / review of past events


Job Requirement

  • Holds a tertiary qualification in event / food and beverage / catering / hospitality management or any relevant field.
  • At least 3 years working experience as an assistant manager in managing catering services for a MICE organisation.
  • At least 5 years working experience in a department / function that manages catering services or similar in a sector or organisation similar
  • Knowledge and understanding of catering services requirements such as the use of external resources and their application to the Centre, relevant standards and processes related to food and beverage / catering services including legal and other requirements e.g. those produced by MAH, DBKL, Ministry of Health etc
  • Knowledge and understanding of the serving and dining requirements including serving order and sequence, kiosk order taking, manners of dining, food presentation (Service à la russe, à la française) etc
  • Knowledge and understanding of electronic point of sales systems such as MICROS.
  • Knowledge and understanding of protocol requirement in events with VVIP presence such as including correct form of address, local gestures and customs.
  • Knowledge and understanding of ISO and Business Continuity risks determination related to the provision of catering services.
  • Knowledge of business and management principles involved in strategic planning/problem solving, resource allocation, human resources modelling, leadership technique, budgetary analysis, and coordination of people and resources.
  • Required language(s): English and Malay
    • Preferably with thorough Ungerboeck knowledge
  • Preferably Senior Executive specialized in Hotel Management/ or equivalent.
